About the Winery:
From the beginning, Paul-Henri has farmed organically, working some of the vineyards with a horse and using biodynamic treatments. Since 2015 he went back to a traditional vinification method using cool semi-carbonic maceration. The use of sulphur is close to zero and the wines are not filtered.
