Savigny Les Beaune Premier Cru "Aux Fournaux" is a great Burgundy red wine from the Savigny-Les-Beaune commune. The grape variety used is Pinot Noir. This parcel is more than 50 years old. The name "Aux Fournaux" refers to the coal kilns of which remains have been found.

Red Wine Vinification: It obtains fruity wines, rich in blended tannins, which is the mark of well-ripened grapes. We bring in the grapes in small crates for careful sorting in the winery; a conveyor belt is used for filling the tanks in order to respect the grapes. The fermentation lasts 15 days with pigeages, punching down of the cap, allowing the wine to soak up the richness and the colour from the grape skins before pressing. Ageing takes place in barrels of which 30 % are new. Racking by means of a bellow eliminates the need for a pump. All these precautions limit the handling of the grapes and the wine as much as possible, thus preserving all the richness. The importance of this commune resides in the size of its surface and the number of renowned climats*. Our Savigny-Les-Beaune comes from the "Les Fournaux" climat*, characterized by a deep and ferruginous ground.

The wines are coloured, elegant, and quite powerful, marked by a dominant of Morello cherries, black currant, and raspberry, then subsequently developing notes of undergrowth after some years. Savigny-les-Beaune is delicate with discreet tannins. The premier cru comes from the upper part of this big parcel, the soil is poorer and less humid than the bottom part of the slope, classified village, the tannins are finer, and they develop a longer presence in the mouth. * The term "climate" constitutes the Burgundy definition of “Terroir”, in other words, the specific geological and climatic conditions found on a defined plot of land.

 

About the Winery:

This family estate is extremely old. A wine-taster from 1765 on which the family name appears is carefully kept from generation to generation. After Robert, Roland, and now Vincent and Sylvette are hard at work managing the estate. The Estate comprises 20 hectares of vines in the villages of Pernand - Vergelesses, Savigny les Beaune, Aloxe Corton and Beaune. Located between Côte de Nuits and Côte de Beaune, the Pernand– Vergelesses vineyard, tucked away in the green surroundings of a quiet valley, begins at the foot of Corton hill. It's the only vineyard to offer a whole range of vintages in both white and red wines. It provides a warm welcome to tourists and enthusiastic amateurs who will really enjoy walking in the valley and taking in the quiet beauty of this spot.
