Terroir: The vineyards are located in Valle del Belice, a hilly land in the western part of Sicily. Vines are trained in the traditional Spalliera method (Guyot and Cordone Speronato system)
Ageing: The grapes are destemmed to eliminate any eventual vegetal hints, and then soft pressed. Static decantation of the must takes place at 9/10 degrees celsius, after which selected yeasts are added to initiate fermentation. Fermentation lasts about 12 – 13 days at a controlled temperature, never exceeding 18 degrees celsius. After racking, the wine is left on fine lees for a few months to add structure and complexity.
Colour: Straw yellow with some copper reflections
Palate: Fresh and zesty, it pairs well with seafood and fish
