Palate: Impressive acid structure of tactile precision, intense salivation, and slightly acid vibrato. Salt, rangy wine, with a long and surprising mouth.
About the Wine:
Terroir of Saint Hippoltye, on a steep South-facing slope with historic terraces, is made of very degraded, poor and lean granite. The vines are complex and bring together the earliest varietals and Riesling in a salty symphony.
