Henri & Gilles Buisson Saint-Romain Sous la Velle is a biodynamic, barrel-aged white wine made by Henri & Gilles Buisson with the Chardonnay variety in Burgundy. They are cultivated using organic agriculture and biodynamic principles. The strain yield is limited, and the harvest is carried out manually in small boxes. In the winery, the Henri & Gilles Buisson Saint-Romain Sous la Velle grapes pass over the selection table and are pressed without destemming. The resulting must be fermented in oak barrels with native yeasts and following malolactic fermentation. It is left to age on its lees for 12 months in barrels (10% of which are new and the rest are used and between 1 and 6 years old).
